![]() Now, I'm not a great cook. There are a few things I make really well and when I make them there is a line at my door going around the block. All right, so I have a small ant problem. I digress.
Today I had some frozen fish that had been in my freezer for some time (store bought) and I decided instead of tossing it I would try my hand at making a stew - there is nothing better to cure what ails you in the winter time. I have had some amazing fish stew in my time... and some really stinky, awful stuff that was more like boiled fish guts. This batch ROCKS! So with no idea what to do and only an internet browser to help me along, I gave it a shot. AMAZING. I swear to you, I am blown away. The batch I made will take care of about 4-6 people I'm guessing. So, if you like fish stew or want to clear some room in your freezer, give this recipe a shot. 1 lb of fish cut into 1 inch chunks 2-4 potatoes cut into 1 inch chunks 3 cans of diced tomatoes 2 cans of diced clams (do not drain!) 1 can of crab meat (do not drain!) 2 table spoons of bacon bits (optional) 1/2 cup of chopped carrots (1/2 inch chunks) 1 cup of celery (1/2 inch chunks) 1 table spoon of italian seasoning 1 cup of water 2 chopped onions 2 garlic gloves chopped 1 teaspoon Red pepper flakes (optional - I like a kick) 1 table spoon olive oil salt and pepper to taste Real easy. 1. Saute the onions until they soften then add the garlic. Saute for another minute or two. 2. Add everything else EXCEPT the fish (including the juice from the crab and clam cans). 3. Simmer for 40 minutes 4. Add fish and simmer for 10 minutes 5. Remove from heat for 15 minutes 6. Chow down!
